I include my full job history on my resume because some of my earliest jobs have the closest experience to the kind of jobs I am applying for now. However, by having my full job history it immediately gives away my age or shows that I am 'overqualified' as I moved up into more managerial roles whereas my earlier jobs were not, but I realized I prefer being a 'worker bee' and having less responsibility/pressure. I work to live, not live to work. So how do I format my resume to avoid the issues? I have found that the majority of recruiter as well as ATS only respond to chronological resumes with each job and title, not a skills based resume, etc. Believe me, I have tried....
